Our mystery blend #4 seems to be a rare thing indeed for high-end espresso these days: a clean, dry-process, comfort-food roasted coffee. The fruit is dried, the funk is absent, the body is heavy, and the acidy is muted—but present. My favorite espresso from this blend has hints of dried cherry and a slightly pithy pink grapefruit citrus acidity. On the bitter side, there's some smoky cask flavors with hints of cocoa and vanilla, which plays pretty nicely with the dried fruit flavors. The body is nice and syrupy-thick. The coffee is definitely a little smoky on my palate, even at its best. But at its best, the smokiness is complex and interesting. Where Jim has called this a granola bar dipped in an añejo tequila, I'll call my take a cherry-dark chocolate bar dipped in mezcal.
