Kochere, Yirgacheffe in Ethiopia Coffea Arabica, local heirloom Just arrived in the pacific northwest in February 2012, we are excited to present this coffee that was picked at the end of 2011 in Ethiopia. Kochere is one of the districts in the Borena zone, found 25 miles south west of the town of Yirgacheffe. Kochere’s population is around 10 000, most of them having coffee as their main source of income. This coffee is a blend of various indigenous heirloom varieties. Coffee cherries are being delivered by smallholder farmers to the mill, where the ripe cherries are being processed using the traditional wet processing method often used in Ethiopia. The skin of the fruit is removed before the coffee undergoes a fermentation followed by washing to remove the remaining mucilage.
