And new coffee shipping next week is now online: Colombia La Esperanza Compania

South in the department of Huila in Colombia, Hector Artunduaga has his coffee farm that he named La Esperanza Compañia. Situated at an altitude of 1700 meters above sea level, the farm consists of nearly 7 hectares of coffee growing land, and is located near Palmar de Criollo in the municipality of Pitalito. It is our second year buying this coffee, that we chose after tasting many samples from various producers in the area. After picking, the cherry is pulped - skin and some of the fruit is removed before the coffee undergoes a fermentation to break down the remaining fruit, or mucilage. When this process is finished after 12-14 hours, the remaining mucilage is washed off, and is dried to below 12% moisture content to prepare for export. For this purpose, Hector has built a plastic covered drying house with excellent ventilation to help the drying process in an otherwis...
