Los incomprendidos robustas

Ése es un ejemplo, sin embargo, de la percepción que se tiene de los robustas, como sinónimo de todo lo malo que hay en el café. Hay personas en nuestra industria que se escandalizan incluso ante la idea de probar al pobre robusta: más racismo. Sin embargo, en mucho, la percepción viene de la ínfima calidad de la mayoría de los robustas que encontramos en el mercado, destinados a cafés solubles o a mezclas para espresso en el mejor de los casos. Y es que el robusta se encuentra inmerso en el círculo vicioso de la mala calidad, como en su momento lo estuvieron los cafés naturales, que es más o menos así: produzco un café con mala reputación (robusta, por ejemplo), entonces el mercado me castiga el precio, sin opción a diferenciación por calidad; recibo bajos precios sin importar mi esfuerzo en calidad, y por tanto dejo de esforzarme por la calidad y termino produciendo un c...
